Take Home Chef: Season 1, Episode 59

Oysters with ponzu sauce and homemade pickled ginger, talapia with ginger and shallots, and steamed Korean pears with jasmine and honey. Grilled rib-eye steak; crispy potatoes; chocolate-covered mango and vanilla ice-cream bombe. Orange chicken, stir-fried rice, and a dessert of tempura strawberries with chili-and-lime marscarpone dip. An Indian meal includes shoulder of lamb; okra bhaji; rice; and pineapple poached in mint syrup. Curtis installs a cooktop, then helps prepare peasant-lentil stew; grilled garlic bread; and rhubarb with Grand Marnier sabayon sauce. Curtis serves a south-east Asian curry with jumbo shrimp and scallops. For dessert, he serves strawberries poached in champagne with whipped mascarpone and crème fraiche. Curtis serves grilled swordfish on a bed of fennel and capers and for dessert, rich chocolate mousse layered with crème brulee and topped with berries. Curtis and Shira surprise Natasha and then serve up Sangria and a variety of tapas plates including chorizo, cheese-stuffed chilies, marinated shrimp, stuffed artichokes, and lamb cutlets.

The main course is beef Wellington with a side of string beans, and for dessert, vanilla ice cream with a homemade caramel sauce. Pan-fried mahimahi, marinated with olive oil and saffron, served over baby spinach with a creamy saffron sauce; chocolate cheesecake sprinkled with powdered sugar and topped with chocolate sauce. A Brazilian-themed menu includes caipirinhas, a traditional Brazilian cocktail; soup made with corn and baby tomatoes; and Brazilian chicken with okra and black beans. A birthday menu includes roasted potatoes with sour cream and chives; spaghettini and crab meat in a white-wine sauce; and apple sorbet topped with a spun-sugar garnish.

Omar is taken completely by surprise when Curtis casually walks in on a CHP training session and offers to help say farewell to the captain in style. The officers send Curtis to a secluded lot nearby to get a head start on the big surprise meal. Dim sum and a chili dipping sauce; Singapore-style chili crab; pineapple skewers covered in caramel sauce and toasted coconut. Curtis offers his cooking skills to Morgan whose boyfriend happens to be a chef.

Amanda exchanges a day at the office for a day in the kitchen as she and Curtis cook an unforgettable meal. For main course, bubbly, four-cheese fondue of vegetables and bread. For dessert, an assortment of summer fruit and rich creamy chocolate fondue. Curtis serves zucchini stuffed with ricotta and tomato sauce, linguini with shrimp in a homemade pesto sauce, and fresh seasonal berries in a raspberry sauce.

A sunset dinner at a marina features prosciutto and pears with balsamic vinegar, a seafood main course called frutti di mare and chocolate fondue with fresh fruit and berries for dessert. Duck and watermelon, followed by monkfish served on top of creamy garlic potatoes. Host Curtis Stone serves filet mignon with red-wine-and-mushroom sauce on a bed of sautéed spinach; and for dessert, strawberries flambé topped with granita. Recipes include steamed Alaskan black cod, stir-fry and a chocolate box filled with chocolate cream and fresh raspberries.

The main course is a pan-fried red snapper served on top of braised romaine hearts with arugula pesto. Curtis serves Pacific Oysters Rockefeller, a whole red snapper with mussels and white wine, and for dessert, goat's cheese with apples and grapes. For dinner, Curtis plans a roasted rack of lamb with parsley, dijon chives, and Provencal ratatouille. The dessert is a decadent mint chocolate soup with melting chocolate croutons. While the expecting couple enjoys the heirloom tomato and buffalo mozzarella salad, Curtis puts the final touches on the ravioli with a brown butter and sage sauce that he completes with pine nuts.

The main course is roasted lobster with chanterelles, crosnes, and garlic. To finish the evening, Curtis treats the happy couple to upside-down apple and pear caramel tarts. John and Caroline sit down to a Latin barbeque featuring pork tamales and grilled shrimp with South American sour cream, chili, cilantro and lime all wrapped in a banana leaf. Curtis serves a tropical cocktail with coconut milk and white rum alongside crispy whole snapper with string beans and Tom Yum Kung . Curtis spots a cute Russian woman named Elena having trouble selecting the right kind of olive oil. Curtis offers to help Elena out, but only if she agrees to take him back home so he can cook a meal for her family.

Curtis offers Lauren the chance to take him home so he can prepare an amazing meal for her and her husband, John. Lauren, who has been training for a marathon while John rides alongside of her, rooting her on, looks at this as an opportunity to express her gratitude.
